In our bodega we seek the varietal expression of the local grapes always in hand with freshness, balance and elegance.
VINIFICATION

HARVEST
The winery is located in between the vineyard and all grapes are hand-harvested in 10 Kgs cases by our bodega team. Our winery in Mallorca is focussed in a selection of the grapes in the vineyard before it arrives at the winery, and therefore our harvest team is highly
trained to understand and select the best grapes.

VINIFICATION
We elaborate more than 7 different grape varieties and all of them have a completely different vinification process. It is then crucial to understand the fruit perfectly before it
arrives in the winery to define an unique strategy for every grape and every wine. We define the wine in the vineyard and only in the bodega the wine strategy takes place.

AGING
Our wine techniques search for the use of barrels and tanks that have a low impact on wines. This means big barrels in order to reduce the tannins from the oak and to maximise the expression of the fruit in the wine.

It is just as important to obtain the best fruit in the vineyard as it is to be able to interpret its
singularities. This is the only way to find the most respectful strategy in the winery.

Handpicking allows us to select directly from each plant and from each vineyard those clusters that are clusters that are of interest to us at any given moment.
